Nutritional value

The main ingredient in this recipe is wholemeal bread - that is, bread made from whole wheat flour. This one is a source of complex fiber and carbohydrates, in addition to providing B vitamins and minerals such as phosphorus and iron and has a very low fat content.

In this recipe, I replaced the classic milk with almond milk and the sugar with stevia. Of course, if you don't want to, you don't have to sweeten the skewers (after all, almond milk already makes them sweet). You can consume them later with honey.

At the nutritional level, almond milk provides between 25 and 50 calories per 100 ml and is rich in monounsaturated fats ("good" fats), in addition to vitamins B6 and E.

French pancakes

Here is a quick recipe for skewers, ready in 10 minutes, but in a healthier version! Try it too!

Ingredients

  • 4 slices of bread, older than a day (I used wholemeal bread with seeds)
  • & frac34 cup almond milk , or other vegetable milk
  • 1 tablespoon brown sugar
  • 1 tablespoon tapioca flour
  • & frac14 teaspoon freshly ground nutmeg
  • a drop of vanilla extract
  • a pinch of sea salt
  • coconut oil for frying
  • For topping:
  • crushed coconut
  • strawberries
  • melon

Instructions

  1. In a small bowl, mix the almond milk, brown sugar, tapioca flour, nutmeg, vanilla and salt.
  2. Heat the coconut oil in a large pan over medium heat.
  3. Dip one slice of bread into the mixture to cover each side.
  4. Fry the bread on a hot pan for 2 minutes, on each side until golden brown.

Salty skewers

INGREDIENTS (for two people)

  • 2 large slices of bread or 4 small ones
  • 1/2 can of coconut milk
  • 2 tablespoons curry paste
  • juice from 1/2 lime
  • 2 green onions
  • 5 eggs
  • butter or sunflower oil for frying

The bread is cut into thick slices and left to dry. If you have slices left over from the Christmas table the day before, so much the better.

In a blender put the coconut milk, curry, lime juice, a piece of onion cut into large pieces and the white part from the second and an egg. Mix and pour the sauce into a pan. Put the slices of bread in the sauce and let it soak for 1-2 hours, turning periodically.

Fry the skewers in butter or oil. Fry two stitches per person separately.

Place the eyes on the slices of bread and sprinkle with chopped green onion stalks. I also put a few mango-flavored salt granules over the mesh, more for the look, but no need, especially since you are not all crazy like me so you have 10 types of salt in the house & # 8230 Anyway, pasta of curry is salty and no salt is needed.

  • You can also use coconut oil for frying, but only if you eat them immediately (it is also valid for butter), otherwise, if they get a little cold, they become slimy.
  • As I said, the recipe I had seen was in the version of Thai salted fries, so if you feel like it, you can buy Thai green curry and put it in place of the Indian one, to which you can add a few more drops of fish sauce. and a few sprigs of fresh coriander for a more authentic taste. In this case, at the end, sprinkle on top of coriander leaves, not just green onions. But be careful not to get too salty from the combination of green curry and fish sauce.
