It goes without saying that the delicate extra virgin olive oil that you will use for the jars will then become a spicy oil delicious, which you can use to give a strong note to your dishes. When will you prepare these hot peppers in oil, I recommend, use disposable gloves to avoid direct contact with the hands and thus avoid any subsequent contact with eyes and other delicate parts of the body. How to make chillies in oil
Clean the peppers and pat them thoroughly.
Then cut them into small pieces with scissors, collecting them in a bowl.
Add the salt, mix and cover with a clean cloth.
Let it rest for 12 hours, stirring occasionally.
After this time pass them in a potato masher to remove all their water.
Put them back in a bowl, cover them with vinegar and let them rest for 10 minutes.
Squeeze them again with the potato masher to remove all the vinegar, then dab them with a paper towel.
Then transfer them to sterilized jars, up to half a centimeter from the edge, press them and cover them with oil.
Let them rest for a couple of hours, without closing them, and add further oil if necessary.
Your peppers in oil are ready, put them in a cool and dark place.
