It is our favorite and it is a tradition to eat belly soup on New Year's Eve. Until this year, I ate it with my parents, and now I have dared to do it too. The jury decided: it was very good :)

Ingredients

  • 1 beef
  • 2 kg beef belly (I had pre-cooked)
  • 2 carrots
  • a piece of celery
  • 0 piece of parsnips
  • 2 bay leaves
  • salt, peppercorns
  • 4 yolks
  • 400 g sour cream
  • 8 cloves of garlic
  • vinegar

Method of preparation

Wash the beef bone and bring to a boil. When it starts to foam it makes a lot of foam. Remove from the heat, discard the water and wash the meat well.

Wash the pot and bring the beef to a boil. Add salt, peppercorns and bay leaf. Let it boil until the meat on the bone is well cooked.

After it boils, remove the bone (I chose the meat from it and put it in the soup).

Strain the soup and discard the bay leaf and pepper.

Put it on the fire again and add the washed belly (if you use pre-cooked belly). Pre-cooked belly does not need too much cooking time (30-40 minutes)

Add the celery and the finely chopped parsnip. We clean the carrot, put it on the grater with small meshes and heat it in a little oil. Then add it to the soup.

Let the belly boil and add vinegar to taste.

We mix the yolks with sour cream and a soup polish.

Add the yolks to the soup pulled from the heat and mix a little. Put it on the fire again and add the crushed garlic. Let it boil and turn off the heat.

Serve hot with garlic, sour cream, vinegar and necessarily hot peppers.
